I would like to know what is the best method of attaching leather to glass. What is the best glue to use and are there any precautions that I need to take?

Yes, as @Fadi mentioned, test some samples using solvent based contact adhesive, just make sure you clean the glass thoroughly prior to testing, even fingerprints can leave oils that reduce bonding.
If you don't have any luck there, many new gel superglues on the market contain rubber as an additive to reduce it's brittleness, so this may be a viable alternative (watch for fumes!).
Can I ask what project you are working on here? Sounds interesting.
I have a lot of leather samples that were gifted to me and would like to use them with a different medium. This will be either I love the way this turned out, or I'm never doing this again.🙂
