Hello. What do you use for padding to give a volume to leather, but with soft and bouncy feel? I've seen some use foam sheets. Specific suggestions and where to buy would be greatly appreciated! Thank you.

Yes, foam is common, although is can lose volume over time under compression, so don't use it on belts or watch straps which use buckles.
You can use vegetable tanned leather as a filler, or chrome tanned leather for more softness. Other options include, rubber, bonded leatherboard, felt and fiberboard. The softest will be foam followed by felt and chrome tanned leather.
