So my girlfriend Carrie’s some of the LV bags. She likes the neverfull and a few others. I know these are vachetta covered in canvas but I’m thinking about making a bag like this of just leather. What type of leather would replicate that canvas style? The last bag I made was calf skin and it was still ridged. Im looking for something that is more “floppy” but not like upholstery Leather. Thoughts?

That's going to be quite subjective. I would recommend going to a supplier and taking a look at a selection of skins.
Some of their canvas bags are reinforced, so the stiffness varies from bag to bag.
