the steel of this knife is so bad, no more than 3 sliding on testing chrome leather scrap, the blade will be rolled up, i just do not understand why blanchard use such unsustainable steel for knife, they
call this 1005 paring knife is most thickness of steel among other pairing knifes. Useless. At beginning i thought it is because of this knife not properly heat treated but today i received 2nd one, same problem. Who can explain this.
It is not burr, i stropped it off, if you touch the rolled blade part, you will feel it very rough.
I think even the softest steels should last more than 3 swipes. It sounds to me (without looking at it) like you could have a burr rolling over. If you're certain that isn't it, could the blade angle be too low?
