So, Santa brought me a nice duo of Amy Roke pricking irons (2 + 5 teeth, 3.0 mm).
The issue is that, in my opinion, they are not sharpened. I tested them in some chrome tanned goat and was a bit difficult to have the pricks well done at once.
I would like to know how I should sharpen these tools? I have never sharpened any iron/chisel at all.... :(

I have 3 Amy rokes. They are hand polished, really the best I have seen. Please not that they are not ment to puncture the leather all the way. Hence the name. But to mark for stitching. I really can't see you being able to make them any better.
Check out the Course Supplies page for the diamond plates that I list. They are thin, so you can clamp one off the edge of a table and CAREFULLY sharpen your irons. Just make sure that each prong dictates the angle.
Just remember that sharp prongs also lack toughness and will deform easier. It shouldn't be sharp enough to cut you.
