Hello, I am starting to cover the box in goat leather, but after I cut out one of the sides of leather and start to skive down the edges, it stretches the leather and then I have to cut it down again and re-skive it.

Usually, this happens more on a lower quality piece of leather, or even the outer edges of a high quality piece of leather (belly, legs, neck etc).
Try to cut the pieces towards the center of the animal along the back. The least stretch will be found going from the head to tail of the animal too.
Alternatively, place down some thin double sided sticky tape on your paring stone and align the edge with that, then when you skive you are not pulling on the leather. Test this on scrap leather first.
